one ( single) loin, 1kg, lamb

½ cup hazelnuts
1 T butter
1 t cumin seeds
1 onion, chopped
1/2 cup goji berries, soaked
1 cup spinach, just blanched
½ cup breadcrumbs
some lemon zest
salt and pepper



Toast hazelnuts, rub off the skin and chop.
Drain the goji berries

Heat the butter and toast the seeds, add the onion and soften. Add the soaked goji berries .
Add the hazelnuts, breadcrumbs and zest.

Lay the spinach on the loin and then the hazelnut-goji berries filling
Roll up and tie tightly.

Preheat the oven to 220° C
Roast the loin in the oven 15 minutes and turn oven down for another 30 minutes. ( 15 minutes per 500 g) or use your thermometer, take out the oven at 57 ° C

Rest meat for another 15minutes, before serving
