Ingredients
1 cup flour
¼ cup rolled oats
1 t baking powder
½ t baking soda
2 T butter
1 cup milk
2 eggs operated in yolks and whites
Method
You can use ½ cup wholemeal and ½ cup white flour, or for wheat free pancakes you can use 1 cup buckwheat flour ( also called blini’s)
In a large bowl put flour and oats, and baking powder and soda.
Melt the butter in a small pot, take from heat source andadd the milk and the egg yolks and mix well.
Mix the flours and the milk mixture together, until well combined.
Whisk the egg whites until fluff and fold into the pancake batter carefully but totally mixed in.
Melt butter in a frying pan and bake your pancakes on a small to medium heat. Turn and flip the pancakes over when turning to dry on the top, be careful not to burn the pancakes.
You can make 2 big pancakes or 8 smaller ¼ cup of batter pancake.
Decorate as you wishes.
With fruit, sour cream. and or caramelised fruit.
Or go savoury with egg and bacon!!
