Chicken Lollipops

makes 6

6  chicken drumsticks

1 lemon

3 T olive oil

black pepper

salt

garlic

thyme

½ cup cranberry jam

2 T water

Prepare the chicken drumsticks into lollipops.

Cut of some at the bottom so the drumstick can stay up.

Use a sharp knife and scissors. Cut around the bone and pull the meat up, use a scissors for the tendon. With paper towel pull the meat over the joint at the top, Clean as much as you can. Push the meat downwards on the bone to create the lollipop with the bone sticking up.

Mix the marinade and coat all the chicken meat.

Preheat the oven

Cover the tips with some foil

Bake in the oven for 30 minutes, or until meat is 75 ºC.

Dissolve the cranberry jam with some water.

Brush the baked lollipops and bake for a further 3 minutes

Make a wreath from vegetables and decorate with a Rocket dressing, Whipped Feta, Walnuts and Borage Flowers

Rocket Dressing

1 cup of Rocket leaves

2 cloves Garlic

2 T lemon juice ( plus some zest)

2 T mustard

2 T honey

1  cup extra virgin olive oil

salt and pepper

Add all ingredients to a jar and use a sticke blender to mix all to desired consistency

Season with some salt and pepper.
