Super Greens Quiche

(makes one large quiche, or 2 smaller ones, or 6-8 mini quiches)

The dough for this quiche recipe is very simple.
Adding the sesame seeds to the flour helps create little air pockets in dough which gives it a light and crunchy texture.
It is important to leave the dough to stand for some time, as the flour will soak up the water, and it will be so much easier to press into the baking dish. While the dough is resting you can make the filling, before assembling the quiche.

Dough:
2 cups stone ground flour or white flour, or mixed
¼ cup sesame seeds
1 t Salt
¾ cup lukewarm water ( maybe more, depending of what flour you use)
½ cup olive oil

Put the flour, sesame seeds and salt in a bowl, mix and make a well in the middle.
Mix the water and oil, and mix well.
Mix the water-oil mixture into the flour with a fork and knead lightly.
Cover and leave for at least 15 minutes to rest at room temperature.


Super Green Filling
350 gram silverbeet
2 kale leaves ( cavil nero, or curly kale)
50 gram parsley
50 gram rocket leaves
if I got it in the garden some lovage leaves, or celery stalks
1 onion
1 T olive oil
1 t currypowder
100 gram tasty cheese
4 eggs
100ml cream
Salt and pepper
½ t Nutmeg

Preheat the oven to 200 º Celsius.
Peel and finely cut the onion.
Wash and cut the silverbeet and greens.

Heat the oil in a frying pan.
Sautée the onion and add the curry powder.
Add the silverbeet and greens and wilt the greens slightly.
Leave to cool.

Butter and dust a quiche form or spring tin.
Prepare the dough; knead lightly and press out into the quiche form, or spring tin. Make a disc and use your knuckles to press to the sides from the middle and then up the edge with your thumb.

Grate the cheese and mix through the vegetables.
Break the eggs in a small bowl; add the cream, salt, pepper and grated nutmeg.
Mix the egg mixture with the vegetables.
Fill with the vegetable – egg mixture.

Bake in the oven for 30 – 45 minutes at 200 ºCelsius.

 

Other options for quiche Fillings:

Use different vegetables: Choose cauliflower or broccoli florets, slices of red peppers, pumpkin or mushrooms, or asparagus.

Quiche Lorraine is with onions and bacon.

You can also make individual quiches. Press dough into a muffin tin or individual pastry bases, and fill with vegetable-egg mixture.

You can use different cheese, like blue cheese or feta, or even chorizo sausage.
